Cheese and Pistachio Cake 😋
Cheese and Pistachio cheesecake is a delightful and nutty dessert that will leave your taste buds craving for more. The creamy spreadable cheese and ricotta filling are complemented by a caramelized pistachio topping.
Ingredients:
Base:
– 150g butter
– 300g digestive biscuits
For the Pistachio Cream:
– 250g spreadable cheese
– 200g ricotta
– 250g fresh cream
– 100g sugar
– 100g pistachio cream
– 10g gelatin sheets
For the Caramelized Pistachios:
– 60g pistachios
– 60g sugar
Instructions:
1. For the base, blend the digestive biscuits and then add melted butter. Press the mixture into a mold and refrigerate.
2. Soak the gelatin in cold water.
3. For the cream, mix ricotta, spreadable cheese, and sugar. Add the fresh cream and pistachio cream.
4. Squeeze and dissolve the gelatin in hot milk, then add it to the cream mixture.
5. Pour the cream over the prepared base and refrigerate for 3 hours.
6. Decorate the cake with caramelized pistachios.
