Ingredients:

 

1 pound minced meat (beef, chicken, or turkey)

1 onion, finely chopped

2 cloves of garlic, minced

1 bell pepper, finely chopped

1 teaspoon ground cumin

1 teaspoon chili powder

Salt and pepper to taste

1 cup cooked rice

1 cup canned beans (black beans, kidney beans, or pinto beans), rinsed and drained

1 cup shredded cheese (cheddar, Monterey Jack, or Mexican blend)

Tortillas (flour or corn)

Optional toppings: sour cream, guacamole, salsa, chopped cilantro

Instructions:

 

In a large skillet, heat some oil over medium heat. Add the minced meat and cook until browned, breaking it up with a spoon.

Add the chopped onion, minced garlic, and bell pepper to the skillet. Sauté for a few minutes until the vegetables are softened.

Stir in the ground cumin, chili powder, salt, and pepper. Cook for another minute to allow the flavors to blend.

Add the cooked rice and beans to the skillet. Mix well to combine all the ingredients. Cook for a few minutes until everything is heated through.

Warm the tortillas in a separate skillet or in the microwave to make them more pliable.

Spoon a portion of the meat and rice mixture onto each tortilla, leaving some space at the edges. Sprinkle some shredded cheese on top.

Fold the sides of the tortilla over the filling and then roll it up tightly into a burrito.

Optional: If desired, you can place the burritos on a baking sheet and bake them in a preheated oven at 350°F (175°C) for about 10 minutes to melt the cheese and make them crispier.

Serve the minced meat burritos warm, and garnish with your favorite toppings such as sour cream, guacamole, salsa, or chopped cilantro.
