Ingredients:

  • 1-1/2 pounds of ground beef
  • 1/4 teaspoon salt, or to taste
  • 1/4 teaspoon pepper, or to taste
  • 3 teaspoons olive oil
  • 2 cups of green or red pepper, OR 1 cup of each, roughly chopped
  • 1 small can of mild OR hot RoTel diced tomatoes with chopped peppers, drained
  • 1 cup of roughly chopped onion
  • 4 whole pita breads, warmed and softened in the microwave
  • 1/2 cup of sour cream mixed with 1/4 cup of blue cheese crumbles, optional
  • 4 12×12 in sheets of aluminium foil
