Recife original roll cake

Ingredients

6 eggs – separate whites and yolks we will use everything

200 grams (1 plus 3/4 cup) wheat flour

200 grams (1 very full cup) of sugar

200 grams (1 cup) margarine

Filling

Melt 500 grams of guava paste with 1/2 glass of water

Roll cake with guava filling

Beat egg whites (tip: use a pinch of salt)

Beat butter and sugar until you get a white paste.

Add the yolks little by little

Add the flour little by little

Add the egg whites and obtain a smooth dough.

Preheat oven to 250 degrees

Layer Phase

Grease well and flour a mold of approximately 30×40

Spread a thin layer of batter onto the baking sheet, as thin as you can get it, bake for 5 to 7 minutes

Take it out of the oven, spread a thin layer of melted guava paste over the dough while it is still hot and roll it up very tightly in the baking dish using a spatula to remove it from the bottom of the baking dish.

Reserve the rolling pin, clean the baking sheet and repeat everything from step 8 until you run out of dough.

Sprinkle sugar over the roll and serve with tea 🙂
