Cheesecake

Here’s a classic recipe for a delicious cheesecake:

Ingredients:

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup melted butter
  • 1/4 cup sugar

For the Filling:

  • 4 packages (32 ounces) cream cheese, softened
  • 1 1/4 cups sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 2/3 cup sour cream
  • 2/3 cup heavy cream

For the Topping:

  • Fresh fruit (strawberries, blueberries, etc.) or fruit preserves (optional)
Instructions:
  1. Preheat the Oven: Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan with butter or cooking spray.
  2. Make the Crust: In a bowl, combine the graham cracker crumbs, melted butter, and sugar. Press the mixture into the bottom of the prepared springform pan to form an even crust. You can use the back of a spoon to help pack it down.
  3. Prepare the Filling: In a large mixing bowl, beat the cream cheese until smooth using an electric mixer. Add the sugar and vanilla extract, and continue beating until well combined. Add the eggs one at a time, mixing well after each addition. Finally, add the sour cream and heavy cream, and beat until the batter is smooth and creamy.
  4. Pour the Filling: Pour the cream cheese filling over the crust in the springform pan. Smooth the top with a spatula.
  5. Bake: Bake in the preheated oven for about 50-60 minutes or until the center is set and the top is slightly golden brown. The edges should be set, and the center may still be a little jiggly.
  6. Cool: Allow the cheesecake to cool in the oven with the door ajar for about an hour. Then, refrigerate for at least 4 hours or overnight to set completely.
  7. Serve: Once chilled and set, remove the cheesecake from the springform pan. You can top it with fresh fruit or fruit preserves if desired.

Enjoy your homemade cheesecake!
