Mama’s Cornbread Dressing
Ingredients:
For the Cornbread:
  • 2 cups cornmeal
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 1/2 cups buttermilk
  • 2 large eggs
  • 1/4 cup vegetable oil
For the Dressing:
  • 8 cups crumbled cornbread
  • 2 cups stale bread, torn into small pieces
  • 1 cup unsalted butter
  • 2 cups onion, finely chopped
  • 1 1/2 cups celery, finely chopped
  • 4 cups chicken broth
  • 4 large eggs, beaten
  • 2 teaspoons sage, dried
  • 1 teaspoon thyme, dried
  • 1/2 teaspoon black pepper
  • Salt to taste
Instructions:
1. Prepare the Cornbread:
  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, mix together cornmeal, flour, baking powder, and salt.
  3. In another bowl, whisk together buttermilk, eggs, and vegetable oil.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Pour the batter into a greased baking dish and bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  6. Allow the cornbread to cool, then crumble it into a large mixing bowl.
2. Prepare the Dressing:
  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, melt the butter over medium heat. Add the chopped onions and celery, and sauté until they are softened.
  3. Add the sage, thyme, black pepper, and salt to the skillet, and continue to sauté for an additional 2-3 minutes.
  4. In a large mixing bowl, combine the crumbled cornbread, torn stale bread, and the sautéed onion and celery mixture.
  5. In a separate bowl, beat the eggs and mix in the chicken broth.
  6. Pour the egg and broth mixture over the cornbread mixture, stirring until well combined. The consistency should be moist but not soupy.
  7. Transfer the dressing to a greased baking dish.
3. Bake the Dressing:
  1. Bake in the preheated oven for 45-55 minutes or until the top is golden brown and the dressing is set in the middle.
  2. Allow the dressing to cool for a few minutes before serving.
