Ingredients:
- 1 1/2 cups granulated sugar
- 1/4 teaspoon cream of tartar
- 1/8 teaspoon salt
- 1/3 cup water
- 3 large egg whites
- 1 1/2 teaspoons vanilla extract
Instructions:
- Prepare a Double Boiler:
- Fill a saucepan with about 2 inches of water and bring it to a simmer over medium heat.
- In a heatproof bowl (preferably stainless steel or glass), combine sugar, cream of tartar, salt, water, and egg whites.
- Whisk and Heat:
- Place the bowl over the simmering water, making sure it doesn’t touch the water.
- Whisk the mixture constantly for about 7 minutes or until it reaches 160°F (71°C) and the sugar is completely dissolved. The mixture should be smooth and glossy.
- Beat the Frosting:

- Beat the mixture on high speed until stiff peaks form and the frosting is cool. This may take about 5-7 minutes.
- Add Vanilla Extract:
