7-Minute Frosting

7-Minute Frosting is a classic and fluffy frosting that gets its name from the approximate time it takes to achieve the right consistency. Here’s a recipe for you:

Ingredients:

  • 1 1/2 cups granulated sugar
  • 1/4 teaspoon cream of tartar
  • 1/8 teaspoon salt
  • 1/3 cup water
  • 3 large egg whites
  • 1 1/2 teaspoons vanilla extract

Instructions:

  1. Prepare a Double Boiler:
    • Fill a saucepan with about 2 inches of water and bring it to a simmer over medium heat.
    • In a heatproof bowl (preferably stainless steel or glass), combine sugar, cream of tartar, salt, water, and egg whites.
  2. Whisk and Heat:
    • Place the bowl over the simmering water, making sure it doesn’t touch the water.
    • Whisk the mixture constantly for about 7 minutes or until it reaches 160°F (71°C) and the sugar is completely dissolved. The mixture should be smooth and glossy.
  3. Beat the Frosting:
    • Remove the bowl from the heat and transfer it to a stand mixer or use a hand mixer.
    • Beat the mixture on high speed until stiff peaks form and the frosting is cool. This may take about 5-7 minutes.
  4. Add Vanilla Extract:
    • Add the vanilla extract and continue to beat for an additional minute until well combined.
  5. Frost Your Cake or Cupcakes:
    • Once the 7-Minute Frosting is ready, use it immediately to frost your cake or cupcakes. It’s light and fluffy, making it perfect for topping your favorite desserts.

Note: Be sure to frost your cake or cupcakes while the frosting is still warm, as it sets up quickly as it cools.
