Follow these simple directions to create your Provencal beef stew:

  1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the beef stew meat and brown it on all sides. Remove the beef from the pot and set it aside.
  2. In the same pot, add the diced onion and minced garlic. Sauté until the onion is translucent and the garlic is fragrant.
  3. Add the carrots and celery to the pot and cook for a few minutes until slightly softened.
  4. Return the browned beef to the pot. Add the diced tomatoes, red wine (if using), beef broth, tomato paste, dried thyme, dried rosemary, bay leaf, salt, and pepper. Stir well to combine.
  5. Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let the stew simmer for 1.5 to 2 hours, or until the beef is tender and the flavors have melded together.
  6. Taste and adjust the seasoning with salt and pepper if needed.
  7. Remove the bay leaf from the stew before serving.
  8. Ladle the Provencal beef stew into bowls and garnish with chopped fresh parsley, if desired.
  9. Serve hot and enjoy the comforting flavors of Provence in each delicious spoonful.
